Bake With Me | Chewy Cookie Bars

Happy Sunday y'all!

The past week I've been itching to get my hands on baking tools and bake something. In addition to that, a sudden intense craving for chocolates were taking a toll on me. Chocolates. Baking. Chocolates. Baking. You feel me.

So, the past week, I scouted for recipes that is easy and simple to bake. Went over to Pinterest, and scrolled over the desserts section. Pinterest is so helpful when you're looking for ideas/inspirations/how-tos and so on. I even have their app on my iPhone so that its convenient. 

Then... I stumbled upon cookie bars. It was beautiful, captivating, and it looked so. good. It had a crispy top, chewy and fudgy center, layered with oreo cookies and M&Ms. I was convinced and sold off within seconds and decided to bake this as soon as I get home. 

Look at that crispy sides. I can't resist chipping some off and nibble on it.

Soft. Dense. Chewy. Fudgy. Sweet. Oreo cookies. M&Ms. This screams heavenly.

The recipe is a no brainer. It's simple, no fancy ingredients are needed and it can be done within less than 10 minutes. These cookie bars are so versatile, and it can be switched with other candies too. No M&Ms? You can put chocolate chips, Mars bars, Snickers, Hershey's kisses and so on. Or you can also opt for the healthier option like nuts, raisins, or seeds. 

It's super great for parties, school snacks, or just something to nibble on. Do make sure you drink plenty of water/milk with these as they can be a tad too sweet. 


Prep Time : 5 mins                                                                    
Baking Time : 20-25 mins
Yields: 16 square bars, approximately 2.5 x 2.5 inches each


½ cup of unsalted butter (melted)
1 large egg
1 cup brown sugar
1 tablespoon vanilla extract (I used vanilla essence, it works as well)
1 cup all-purpose flour
Generous amount of Oreo Cookies, I used a whole packet of them, about 10 cookies
M&Ms to sprinkle on the top


1. Preheat your oven at 180 degrees celsius. Get ready your tray and grease it with butter/oil. Then place a baking paper over it.

2. Melt your butter by heating it on a pan. Alternatively, put it in a glass bowl and place it in microwave/oven until it melts.

3. Gather brown sugar, egg, vanilla extract in a mixing bowl and wait till the butter cools down a bit. Once it cools down, pour the butter into the mixing bowl and whisk it until it forms a smooth gooey brown mixture.

4. Add the flour into the mixture and mix it until everything is combined. Do not overmix it.

5. Roughly chop your oreo cookies into small pieces and stir it in your batter.

6. Once everything is done, pour out the batter into your tray and by using a spatula, spread the batter evenly across the tray. Make sure the top is smooth as well.

7. Sprinkle your M&Ms onto the batter and lightly press them using your finger or spoon.

8. Pop your tray into the oven and bake these for 20-25 mins. The top should be crispy and set. The edges have to be firm. To check, insert a toothpick (or a fork) into the center. If it comes out clean, the bars are done! Allow the bars to cool down for 30 mins before slicing it.

Ps: The bars will keep in an airtight container at room temperature for 1 week or in the freezer, up to 6 months.
